Question of the week: grilling time!
It’s time for Question of the Week, which is designed to inspire interesting discussion of enjoyable topics.
This week’s question is inspired by the various comments whenever I post of a picture related to grilling.
Specifically, what is your favorite thing to grill?
For myself, I think it is a good old fashioned burger. I find half the battle in terms of flavor is to spend ninety seconds melting cheese onto the burger in the final phase of grilling. Toasting the bun separately also helps a great deal.

My favorite thing to grill is a well marinated sirloin. Garlic, pineapple juice, soy sauce and herbs, in a ziplock bag for 2-4 hours, then on a hot grill for a couple minutes per side. Yum!
Alas, nowadays it’s mostly chicken legs and pork loin sliced up for chops. Even the cheapest hamburger meat is getting to be too expensive to buy on a regular basis.
During COVID the local grocery store would have 6oz bacon wrapped fillets for $5.99 on a regular basis, so we’d grill them up every Friday with a wedge salad on the side. I like to use a grill sheet so the steaks stay juicy and then flip them over onto the grill side to get the sear marks.
Recently our go-to has been frozen tuna steaks which we do the same thing to, and then make grilled tuna sliders with an Asian slaw on top.
I make my own seasoned butter pads for whatever I’m grilling, Just to add flavor.
We also use a stovetop smoker for salmon, pork loins, pasta, veggies, bacon, whatever. Its a small enough internal space that we can get a good smoked flavor in 20 min with minimal hassle. I stock applewood, cherry, mesquite, hickory, corn cob, and sometimes blend depending on what I’m smoking.
Now if its a serious smoke, like brined turkey breasts for Thanksgiving, I’ll pull out the green egg and go low temp smoke all day.
Last but not least, I enjoy bratwurst every now and then, and my favorites are either the spicy salsiccias or bratwurst ground with apples.
I’m from St. Louis. We know how to bbq. Let me know if you’re ever coming to town, Jonathan!
